“Juksunchae” (죽순채) literally means bamboo shoot — a symbol of purity, resilience, and quiet elegance. At Juksunchae, we embrace these values in everything we do, from our philosophy in the kitchen to the way we welcome our guests.

Juksunchae is Thailand first contemporary Korean fine dining restaurant that explores the intersection of heritage and innovation. With only 12 seats per night, each experience is intimate and thoughtfully curated — from the architecture of the space to the rhythm of the meal.

Mission

At Juksunchae, our mission is to honor the depth and legacy of Korean cuisine through a contemporary lens — crafting intimate, intentional dining experiences that celebrate culture, creativity, and connection. We strive to create a space where every detail, from ingredients to ambiance, tells a story — one rooted in tradition, elevated by innovation, and driven by purpose. 

Executive Chef Henry Lee was the first chef in Thailand to take the risk of reimagining Korean cuisine at a fine dining level — daring to present its depth, elegance, and cultural richness in a way never seen before. In doing so, he challenge expectations and invite guests to experience Korean food through a bold, uncompromising lens.

Sustainable Intiative

We believe that exceptional dining should not come at the expense of the environment. Our initiatives begin with mindful sourcing — prioritizing seasonal, local, and responsibly farmed ingredients wherever possible. We work closely with small producers in Chiang Mai and Chiang Rai who share our values, ensuring quality with integrity.

From reducing single-use plastics and minimizing food waste, to selecting wines from biodynamic and sustainable vineyards, every decision is made with intention. Even our kitchen design and service ware reflect a commitment to longevity, reuse, and meaning.
